Meet David, the chef who, together with TĂąnia Neves, will lead our group into a gastronomic experience through the Caucasus.

“Hello! My name is David V. Antelo. I was born near Lake Leman in Switzerland, grew up in Galicia, and later worked in the UK and France before returning to my family’s roots in Galicia.
I spent years working as a chef in various restaurants across different countries, combining my passions for food and exploration. My time working in the UK is when I met TĂąnia, and we started exploring various places. Together, we created “Tabula Rasa,” a project uniting food and storytelling, reflecting our dedication to culinary heritage and cross-cultural understanding.
Recently, I’ve embarked on a new adventure, diving into a postgraduate course in Gastronomic Sciences and Human Evolution. Working at the Michelin-starred Cobo Estratos in Burgos, with its human evolution-themed menu, deepened my interest in food’s important role in physiology and culture. Food is about more than just sustenance. It’s a historical record, weaving together our physiology and cultural heritage.
Now, with Tabula Rasa back in full swing, Iâm ready to dive into a new adventure: our Caucasus tour. This isnât your everyday tour. Weâll travel from the vineyards of Kakheti to the wild, rugged peaks of the Caucasus, celebrating the rich ethnic diversity and natural beauty of Azerbaijan, Georgia, and Armenia along the way. Every meal, every local encounter, and every scenic landscape is a chapter in the story of how food has shaped cultures over centuries.
